Layered Berry Overnight Oats
Happy New Year and welcome to the world of quick and healthy breakfasts that are delicious, nutritious, and of course, colorful.
As a busy mom of two, my mornings here are hectic. Between having their breakfast ready, brushing their hair (which is a pain), and searching for that field trip form permission slip that is always getting lost, I run around like a mad woman.
Thank goodness for coffee, otherwise I’d be a zombie.
For my mornings to go smoothly, I try to make filling recipes that are made quickly. So overnight oats are a lifesaver.
By the way, this ain’t your regular boring oatmeal. Remember when you were little and had to eat that gummy oatmeal that was flavorless?
Don’t worry, you will fall in love again with oats after trying this recipe. It looks more like an elegant dessert than a breakfast item. That’s why my kids love eating it so much.
One spoonful and you’ll taste the sweet and tart berries while enjoying two contrasting textures.
You can mix and match any flavors you may like. For the bottom, I made strawberry overnight oats and topped it with a blackberry and blueberry smoothie.
You can get all the ingredients needed for this recipe at your local supermarket.
Looks so good….
To start, simply blend the strawberry, Almond Milk, vanilla, and honey in the blender.
Pour this creamy mixture into the oats.
Close the jars, shake them, and refrigerate them for a few hours. They will absorb the liquid and become creamy.
Next, blend the yogurt, and frozen blackberries and blueberries together.
Pour the smoothie on top of your oats and enjoy!!

This recipe was so easy and so delicious, my husband at yogurt for the first time! It was a little thinner than I would prefer. Maybe because I used fat free milk, not sure. But I’m making another batch and want to get it right. My husband already bought fat free milk again so I have to use it! Any suggestions

Hi Sue! If you want it thicker simply place a bowl, top with a paper towel-lined strainer and pour the yogurt into the strainer. Leave it in the fridge for a couple of hours and you’ll see the liquid run to the bowl. You’ll be left with creamy thick yogurt in your strainer 🙂
