Venezuelan Tequeños Recipe

If you’ve ever been to a Venezuelan party, you already know that tequeños are a MUST. Crispy, golden, and filled with cheese, they are the ultimate appetizer that brings everyone together.

These delicious cheese sticks are made by wrapping dough around cheese and frying until perfectly golden. The result is crunchy on the outside and soft, melty (but not runny!) on the inside.

What Are Tequeños?

Tequeños are traditional Venezuelan cheese sticks made by wrapping strips of dough around queso de freír and frying them until golden.

They are served at birthdays, weddings, holidays, and basically every celebration. For many of us, they represent joy, family, and home.

The Secret to Perfect Tequeños

The most important ingredient in this recipe is the cheese. You cannot use mozzarella or regular cheese because it melts too much and leaks out.

Instead, use queso de freír or a similar firm white cheese that softens without fully melting.

Ingredients

  • 16 oz Queso de Freír (or firm white frying cheese)
  • 3 cups All Purpose Flour
  • 2 Eggs
  • 2 teaspoons Salt
  • 1/4 teaspoon Baking Powder
  • 2 tablespoons Butter melted
  • 1/2 cup Water warm
  • 1 1/2 cups Vegetable Oil for frying
US Customary - Metric

Instructions

  • Place flour in a bowl. Add the salt and baking powder. Mix
  • Add the eggs and mix with a wooden spoon
  • Add the butter and stir
  • Finally add the warm water and knead with your hands until the dough is smooth
  • Cover and let it rest for 10 minutes
  • Meanwhile, cut the cheese into 3/4" sticks
  • With a rolling pin, roll the dough into a rectangle, 1/4" thick
  • Use a pizza cutter or knife to slice the rectangle into long strips
  • Wrap each cheese stick diagonally with a strip of dough, making sure it is completely sealed. Roll gently on the surface to secure the edges. Repeat with remaining pieces.
  • Heat oil to 350 Degrees F
  • Fry 4-5 Tequeños at a time until golden brown. Remove form the oil and drain with a paper towel. 

Notes

- Do not use mozzarella, it melts too much and leaks during frying
- Queso de freír or similar firm white cheese works best
- Make sure edges are tightly sealed to prevent cheese from escaping
- Fry in batches to avoid overcrowding the pan
- Tequeños can be frozen before frying and cooked directly from frozen

      I’ve tried baking them but the cheese oozes out before the dough has finished cooking so I definitely don’t recommend it

        I do the baling never jad suxh problem. Make aure you wrap them correctly and do not over bale. You evem dont jave to deep fry i have iae little.ool.an dit works !

      I’ve never used it in the air fryer – so I do not if the cheese will melt and ooze out before the pastry is completely cooked

            Airfryer is basically a convection oven. The cheese oozed out before the pastry was completely cooked. I don’t recommend it.

        Since you are emphasizing that you don’t recommend the recipe (or tequeños, for that matter), It is obvious that you have never cooked tequeños before.

        First off, the cheese oozes out because the tequeño has not been assembled correctly, especially on its ends. The kneading technique is essential to give the dough the perfect properties to keep itself together.

        Secondly, the cheese will melt while the dough gets crispy during frying process. Temperature and cooking time are key factors that need to be perfectly balanced while making tequeños.

        I hope this information can help you review your procedure to make tequeños.
