Incredibly Tender Instant Pot Short Ribs
The year 2018 started rocky on a personal level.
But now that the healing part has begun I am craving comfort foods that will lift my spirit.
Feeding a lot of people at once hasn’t always been easy, but recipes like Instant Pot Short Ribs nourish a crowd without breaking much sweat.
I promise you that they will be flavorful, hearty, and falling off the bone in less than an hour.
In the seasoning department, I kept it simple since it’s a kid-friendly item but of course, feel free to add your seasonings and spices.
Serve it with creamy mashed potatoes, rice, quinoa, or even risotto and it will feel like a hug from mom.
Sometimes I love to shred it with 2 forks and just eat it with the sauce in a bowl or inside 2 toasted slices of bread with arugula. If you have leftovers, try the sandwich version. You won’t be disappointed.
Ever since I got my Instant Pot, I started making tons of recipes that otherwise I didn’t have time for.
Wild Rice used to take 2 hours to cook, but now I get it done in less than 30 minutes. The same goes with short ribs. They were either too tough or completely dissolved in sauce. Now they are perfect in texture and taste.
You can, off course change the recipe to suit your needs/tastes. I added root veggies to compliment the sauce and the beef, but feel free to add additional ones.
I recommend opening the fridge and throwing in the pot whatever veggie may be expiring soon.

Instant Pot Short Ribs
Ingredients
- 4 lbs Short Ribs
- 6 tablespoons Flour
- 1 Onion diced
- 2 cloves Garlic minced
- 4 Carrots diced
- 2 cups Beef Stock
- 1 Green Onion to garnish
- Salt + Pepper to taste
- 2 tablespoons Olive Oil
Instructions
- Season the ribs with salt, pepper and coat with flour
- First, press saute and drizzle a little bit of olive oil on the bottom of your IP and brown each side of the short ribs.
- Remove ribs, and add the onion, garlic and carrots. Cook until soft, about 2-3 minutes
- Add the beef stock and ribs into the pot and place the lid on top. Press Manual and set to 40 minutes on High Pressure.
- Once the minutes are done, allow the IP to naturally release pressure for about 10 minutes. Or until the pin on the top drops. (10 NPR)
- Serve over rice or mashed potatoes. They will be falling off the bone!
- Feel free to season the beef with rosemary, thyme, or any other spiced you may like.
