Sweet Potato Chicken Nuggets (Whole 30, Paleo)

Yup, another chicken recipe I’m afraid….

Dessert posts will have to wait until my jeans fit again (at least the stretchy ones)

Even though is a chicken post,  you’ll want to save this one because it is SO GOOD. My girls and husband go crazy for these nuggets.

These delicious Sweet Potato Chicken Nuggets are baked to perfection and are Whole 30 & Paleo friendly. Perfect for a healthy kid-friendly weeknight dinner.

Serve it with a side of guacamole which is Paleo friendly and dinner will be ready in a jiffy. A lot of the time I add a nice crisp green salad to balance out the sweetness.

To make them I start by mixing everything in a big bowl.

Just a bunch of chicken shredded sweet potato, coconut oil, coconut flour, and spices. 

Then, just shape them into “nuggets”, place them in a sheet pan, and into the oven, it goes.

They are amazing when they bake.

As soon as I take them out of the oven my family swarm to the kitchen to steal them all.

Who could’ve thought that nuggets could be healthy?

Just by substituting a few ingredients, it made a huge difference without sacrificing flavor.

Honestly, being on a diet sucks, plus, I don’t plan on making one meal for me and another one for my kids so these kinds of recipes are the perfect happy medium since everybody can eat a delicious dinner while maintaining to a regimen.

Now that I’ve tried these Sweet Potato Chicken Nuggets I am not going back to making them with regular flour, breadcrumbs and eggs again.

They are crunchy, sweet, savory, and so flavorful.

Ingredients

  • 1 lb ground chicken
  • 2 cups finely shredded sweet potato about 2-3 sweet potatoes
  • 2 tablespoons coconut oil
  • 2 tablespoons coconut flour
  • 2 green onion sprigs finely chopped
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
US Customary - Metric

Instructions

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set aside
  • In a large bowl, add all ingredients and use clean hands to fully incorporate
  • Using a measuring tablespoon, scoop out the mixture and roll it into a ball before flattening and shaping it into nuggets. Place on the baking sheet
  • Bake nuggets in the preheated oven for 24-27 minutes, and flip half way through to lightly brown both sides
  • Allow nuggets to cool for 5-10 minutes before serving

    Hi1 I am so excited to try these out on my family – I have some monster sweet potatoes from the farmers market that I need to use up. I have a quick question – Do you shred the sweet potato raw (like w a box grater) or do you bake the sweet potato, then mix the soft sweet potato with the other ingredients? In the recipe, it sounds like the former, but in the picture, it looks like the latter. Thanks for the clarification!

    Hey there! Do you think I could substitute whole wheat flour for the coconut flour? I know it wouldn’t be paleo then, but I don’t have coconut flour and I want to try them tonight!!

    I made these today my 1 year old and they were at HIT! My husband tried them and also loved them… he “hates” sweet potato and I haven’t had the heart to tell him, and don’t know if I ever will 🙂

    These are absolutely delicious. I used my food processor to grind my own chicken because it’s not easy getting to the store these days. I also used white flour without any issues. I think they could be amazing in burger form too.! Thank you for sharing!
