Amazing Sugar Cookies – One dough 3 ways

I know my girls are really looking forward to winter break, spending time with family, parties, and most of all, the baking that will be happening in my kitchen throughout December.
If you’re making Holiday cookies like me, I have the recipe for you.
It comes out perfect every time and you can choose how you want to present them, imagine all the possibilities.
Usually, there’s a recipe for rolling cookies that carries more flour than drop cookies and cut-and-bake ones.
I decided to experiment in the kitchen, tweaked a bit elements, and eliminated the baking powder. The result is these amazing sugar cookies that are crisp on the outside, and chewy on the inside, with a buttery finish and a hint of pure vanilla extract.
One dough is made in 3 different ways:

You’re in luck because this cookie dough is freezable. See those cut-and-bake cookies up top to the left? I just made a log shape, froze them, and then sliced and baked them.
I also rolled the log-in sprinkles to give it a nice festive look.
Every year I invite my daughter’s friends over for a cool cookie-decorating party. I pull out a table and place all the baked cookies.
All they have to do is glaze them and top them with their favorite toppings.

On the right are the cookies, in the middle you’ll see bowls filled with nuts, glazes, and sprinkles. Every girl’s dream.
I even added some caramel in case someone wanted to drizzle their pecan cookies.

Amazing Sugar Cookies
Ingredients
For Sugar Cookies
- 1 cup Unsalted Butter softened
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 1 Egg
- 3 cups All Purpose Flour
- 1 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 2 teaspoons Pure Vanilla Extract
For Glaze (optional)
- 1 cup 2 tablespoons of Powdered Sugar
- 1 tablespoon Light Corn Syrup
- 1 tablespoon Milk more may be needed
- 1/2 teaspoon Pure Vanilla Extract
- Food Coloring optional
- Sprinkles optional
Instructions
- Preheat oven to 350 degrees Fahrenheit
- Line a cookie sheet with parchment paper
- In a mixer fitted with the paddle attachment, mix the butter and sugar for 3-4 minutes or until fluffy
- Add the egg and vanilla. Mix well. Clean the sides and bottom of the bowl with a spatula
- In another bowl mix the flour, salt, and baking soda together
- Slowly add the flour mixture into the mixer until the dough is combined
For Rolling Cookies
- Divide cookie dough in 2. Flatten into a disk, cover and freeze for 10-15 minutes until firm
- Place cookies on a lightly floured surface and roll with a rolling pin
- Cut out desired shapes and place on the prepared cookie sheet
- Bake for 9-11 minutes or until golden
For Drop Cookies
- Scoop cookies into the baking sheet
- Bake for 9-11 minutes or until golden
For Cut and Bake Cookies
- Roll cookie into a log. Line the log with plastic wrap and freeze for 30-40 minutes or until firm
- Cut cookies into 1/4" slices and place on the prepared cookie sheet
- Bake for 9-11 minutes or until golden
For Glaze
- Place all ingredients minus the teaspoon of milk in a bowl. Mix until combined. If needed add the teaspoon of milk
- Add the food color of your choice (if desired)
- Glaze should be thick but still pourable
Assembly
- Dip each cookie into the glaze and shake off the excess glaze. Glaze should cover the surface of the cookie
- Add sprinkles or candy if desired
- Let the cookies dry out on a baking rack
- Store cookies in an airtight container
