These Copycat Nutter Butter Cookies are much better than the store bought kind since you can enjoy them in a bigger cookie with delicious flavor. Plus these are so much fun to bake! There’s nothing better than a homemade cookie.
Remember last week when I was trying to make a peanut butter cookie and forgot to add the granulated sugar? The result was a delicious crumbly soft cookie. Delicious by itself but my main mission was to make a thin crispy cookie with lots of peanut butter flavor like the original Nutter Butter. So after a few tries, I am pleased to say that I FINALLY mastered my technique and got the recipe just right. I ended up combining brown and white sugar so I could have the depth of flavor with a crispy cookie.

Making these Copycat Nutter Butter Cookies are so easy. Simply make the dough and roll it into little balls. Then with a cookie stamp or just a fork make the little waffle cone shape on top before baking.
My main idea was to make the top design with a fork, but my mom found these cute Cookie Stamps at the mall last week and I decided to give them a try. They made the cookies look so cute! My daughter helped me do this part. She

I love the fact that before they go in the oven they look so tiny. And now check out how they spread during the baking process:
When they cool down, simply add some peanut butter frosting to every other cookie and sandwich them together. The only hard part of this process is to resist the temptation to eat them.
And that’s it! See? I told you they were easy. My brother-in-law helped me get the peanut flavor of the frosting just right.

Copycat Nutter Butter Cookies
Ingredients
For Peanut Butter Cookies
- 1 stick unsalted butter softened
- 1/2 teaspoon vanilla extract
- 1-1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup smooth peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- Pinch of salt
For Peanut Butter Frosting
- 4 tablespoon butter softened (1/2 stick)
- 1/2 cup + 2 tablespoons of peanut butter
- 1 1/2 cups powdered sugar
- 2 tablespoons milk
Instructions
For Cookies
- Preheat Oven to 375 Degrees Fahrenheit
- In a small bowl mix the flour, baking soda and salt. Set aside
- Using the bowl of a mixer, cream the butter and sugars together for 3-4 minutes until creamy. Scrape the sides of the bowl down with a spatula
- Add the egg, vanilla and peanut butter. Keep mixing on medium speed
- Slowly add the flour mixture and mix until the cookie dough is combined
- Line a cookie sheet with parchment paper or silicone mat
- Using your hands, shape little balls and place them on the cookie sheet. Keep them separated because they tend to spread
- Shape the cookies with a fork or a cookie stamp
- Bake 8-10 minutes or until browned on top
- Remove from oven and let them cool on the cookie sheet
For Peanut Frosting
- Place the peanut butter, milk and butter on a mixer bowl. Mix on medium speed until combined
Assembly
- Add a tad of frosting into the middle of every other cookie. Sandwich with another one
- Enjoy!

for the frosting…do you use powdered sugar? its listed in the ingredients but not when you mix the frosting ingredients to place between the sandwich cookies….

Aww, I love Nutter Butters so much but I can’t seem to find a copycat recipe that’s authentic. I’m sure this recipe is tasty, but real Nutter Butters are–like Oreos–actually vegan (surprisingly enough), and therefore beloved not just by peanut butter loving vegans but also by those who are allergic to eggs and/or lactose intolerant. I wish I could figure out how Nabisco manages to make these cookies without eggs or milk when all of the copycat recipes use them.
