Back to school means back to routine, and lunchbox making. Not a fan of the latter.

My kids become very picky when they’re in school. If a friend loves something they love it too. If a friend hates something, they hate it too.

So you can imagine how frustrated I get when planning their lunch. These Healthy Mango Fruit Roll Ups has been a hit lately around here. Crossing my fingers it’ll stick.

It’s sweet, easy to chew and fun to wrap around your finger. You can make it with fresh or frozen mango, whatever you have available.

Since it’s mango season now, get as many as you can, cube them and freeze. That way you’ll have plenty for smoothies, desserts, and fruit roll ups.

The golden color is surely mesmerizing. My youngest daughter had a hard time guessing what she was eating. She thought it was candy.

If you’re not a fan of mango, simply use your favorite fruit. Select the ones that are creamier and less watery, for example, peaches, nectarines, strawberries, papaya, etc.

My favorite part is that you don’t need special machinery or ingredients. Just one: FRUIT. No added sugars, additives or dyes. Easy and convenient for traveling, work or school since it doesn’t need refrigeration.

Mango Fruit Roll Ups

This amazing Mango Fruit Roll Ups recipe requires only 1 ingredient and is the perfect kid friendly healthy snack for the lunchbox. Vegan and Gluten Free.

Ingredients

  • 1 1/4 cups Mango Pulp from 1 big or 2 medium mangoes
US Customary - Metric

Instructions

  • Preheat Oven to 160 Degrees F (or as low as your oven can go)
  • Place mango pulp in the high-speed blender or food processor. Puree 
  • Using a spatula, spread the puree onto a cookie sheet lined with silicone or parchment paper. Make sure you spread the puree evenly
  • Place in the oven for 2-4 hours or until the mixture is dry. If mixture is not dry leave it longer 
  • Carefully, peel off the paper and roll it using parchment paper. Cut into strips
  • Keep them at room temperature in a zip top bag
  • Enjoy!

Notes

You may use frozen mangoes. Simply thaw before pureeing.

    Hello ! Recipe sounds great, can’t wait to try it ! Quick questions- have you ever tried making these (or any other fruit roll up ) using reconstituted dried fruit ? Does it work ? I appreciate you time. Thanks !

      Hi Annet! That’s a very good question. I honestly have never tried it and don’t know if it will work since the fruit has already been dried out and the sugars concentrated.

    I have tried this a couple of times. We have beautiful mangoes in South Africa But even though the colour starts out vibrant yellow. When it dries it darkens and has dark spots. WHat am I doing wrong

      You’re overbaking it. Maybe your oven has trouble calibrating the temp. Simply lower the temperature by 25 degrees and watch it

    I made the mango roll ups today but they took a lot longer than planned! I had my oven on the lowest setting (75 degrees) and it took about 5 1/2 hours. Maybe my oven isn’t very good as I upped the temperature a bit as it just wasn’t solidifying… However, I now have 8 rollups sitting in my kitchen ready to munch! Will definitely try again.
