Instant Pot Moroccan Chicken Served With Passion Fruit Black Iced Tea
Just because it’s a weeknight doesn’t mean that we can’t travel to exotic places with our palate.
Invite your kids to sit down at the dinner table and encourage them to leave those pesky electronics behind because this meal will blow their socks off!
It’s sweet, savory, juicy, and a play of unexpected flavors. I paired off my Moroccan chicken with a tangy pitcher of passion fruit black iced tea.
Believe it or not, the flavors complement each other pretty well even though the ingredients come from different places.
I am taking dinner time to a whole new level to encourage and invite conversation. My girls sometimes become zombies with their tablets and when they sit down at the table, their heads are elsewhere.
This is my way to wake them and use their senses. I want them to ask questions, feel the different textures in their mouth, and drink something refreshing.
This Instant Pot Moroccan Chicken is cooked with cinnamon, prunes, golden raisins, and dried apricots. I finish off the dish with toasted pine nuts and sliced almonds for a little crunch.
Served along my passion fruit black iced tea made with Lipton Organic Black Tea.
Usually Moroccan chicken roasts for a long time in an oven. Obviously, during the week I don’t have the luxury of spending hours at home checking cooking. Now with the pressure cooker, it is ready in about 45 minutes or less.
While that’s cooking, I make my refreshing iced tea. It’s hot here in Miami.

Instant Pot Moroccan Chicken
Ingredients
- 4 Chicken Quarters skin and bone on
- 1/2 cup dried apricots
- 1/2 cup Prunes
- 1/4 cup Golden Raisins
- 1 Onion chopped
- 3 Garlic Cloves minced
- 1/2 cup Red Wine optional
- 4 cups Beef Stock
- Juice of 1 Lemon
- 2 tablespoons Apricot Jam more if you'd like
- 1/4 cup Pine Nuts toasted
- 1/4 cup Almonds sliced and toasted
- 2 tablespoons Cornstarch
- 3 tablespoons Olive Oil
- Salt + Pepper to taste
Instructions
- Press the saute button on your instant pot and add olive oil
- Season chicken liberally with salt and pepper. Brown the chicken on both sides working in batches. Remove the browned chicken from the instant pot and set aside
- Add the onions and garlic. Cook for 3-4 minutes or until they soften. Add the prunes, raisins, and apricots. Cook for 1-2 minutes. Season with salt and pepper
- Add the wine and cook until the liquid is reduced for half
- Add the stock and the chicken. Close the lid and pressure cook on manual for 20 minutes
- When the 20 minutes has passed, release the pressure
- Open the lid and press the saute button
- Remove 1/2 cup of sauce into a bowl. Mix that sauce with the cornstarch
- Remove the chicken from the IP and place it on a rimmed serving platter. Add the sauce with the cornstarch back in the instant pot
- When the sauce thickens, add the lemon juice and apricot jam. Stir with a wooden spoon and check for seasoning
- Ladle the sauce on top of the chicken and sprinkle the almonds and pine nuts
- Enjoy!

Recipe for Iced Tea:
Passion Fruit Black Iced Tea
Ingredients
- 4 bags Lipton Organic Black Tea
- 1/2 cup Passion Fruit Pulp strained
- 3 1/2 cups Water
- 1 tablespoon Stevia add more if needed
- Juice of 1 lime
- 4 cups Ice
Instructions
- Bowl 3 cups of water and pour into a pitcher. Add the passion fruit and the 4 backs of Lipton Organic Black Tea. Let it steep for 3-4 minutes
- Discard the tea bags, add the stevia and lime juice. Stir
- Add the ice on the pitcher, stir, and place in the fridge until ready to serve
