Passion Fruit Cake

Valentine’s Day is around the corner, and what better way to celebrate with an exotic Passion Fruit Cake. It’s sweet, tangy and oh so delicious. Once you try a piece, you will be asking for some more.

The secret to this dessert is the passion fruit curd. It adds a nice texture with a burst of citric flavor. And in case you are wondering, it’s all made from scratch.

Growing up in Venezuela, passion fruit is something we often use in juices, desserts and even salad dressings. For me, making a cake was definitely a no brainer.

Topping this Passion Fruit Cake with chantilly cream was a great idea since they creaminess and sweetness compliments the inside flavors beautifully.

If you live in a place where fresh Passion Fruit is not available, don’t worry, the pulp is sold in the freezer section of the supermarket. Just thaw and use it in your recipe. I always have a few bags in my freezer, just in case I get cravings.

To decorate the cake, I used the Cake Boss 2-Color Icing Bag, it is so cool! With one tip you can pipe 2 colors at the same time. Since the passion fruit is yellow, I colored a bit of Chantilly cream to make the cake look nice on top. And of course, I had fun using all the tips included. Piping is so much fun!
