Delicious Spiced Gluten Free Muffin Recipe
I love anything Pumpkin! It’s my favorite time of year to make delicious desserts and breakfast items. And these Delicious Spiced Gluten Free Muffin Recipe will not dissapoint. You can’t even tell they are Gluten Free and everybody in the family can enjoy it.
They are also so simple to make and the ingredients can be easily found in the Supermaket. No need to rush over the speciality food store. I love to the smell of my house while they are baking. Everybody at home patiently await for them to come out of the oven!
For the Spiced Gluten Free Muffin Recipe you will need:
Ingredients:
- ½ cup mashed cooked pumpkin
- ½ butter, melted
- ¼ teaspoon ground ginger
- ¼ teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1/3 cup sugar
- 2/3 cup firmly packed brown sugar
- 2 cups gluten free flour blend
- 1/3 buttermilk
- 2 eggs, slightly beaten
Heat oven to 400°F. Place paper baking cups into 12-cup muffin pan cup or grease cups. Set aside.
Combine all ingredients except butter, pumpkin, buttermilk and eggs in bowl.
Combine all remaining ingredients in another bowl. Stir into flour blend mixture just until moistened.
Spoon batter into prepared muffin pan. Bake for 15-20 minutes or until toothpick inserted in center comes out clean.
Cool 5 minutes; remove from pan.

See? easy. You can make the batter in the advance the night before and bake the next day. I love to spread a little jam and butter on top of mine and they out absolutely divine. I always insert one inside my girls lunch boxes and they love it.
