Easy Peanut Noodles

I get happy with a bowl of hot noodles and a pair of chopsticks. It’s similar to chicken soup. So comforting and so delicious. That’s why I am always looking for different variations and sauces to pair them with. Last night it was these easy Peanut Noodles. Vegetarian, gluten-free, and 100% flavor.

These easy Peanut Noodles are sprinkled with some peanuts on top to give it crunch, saltiness, and flavor. If you’d like, you can toss them with cooked chicken or shrimp, but I love them meatless. Another great idea is to add some red pepper flakes for a hint of spice.

So, how is your summer going? Mine has been awesome! My girls are at the same camp and my husband is driving them in the morning. Since there are no carpools, homework, or after-school activities, I can spend time with them and also work on this blog for longer periods. Summer is for parents too. My husband and I are more relaxed, the kids are happy and I am not looking forward to September.

For vacation, we decided to head to Vermont. The best place to relax and enjoy nature. Deer come and eat from the grass every afternoon and in the past years, we’ve seen many wild turkey families walking along near the woods.

Sometimes, it’s nice to get away and change the air. I love that my kids get to experience the simplicity of country life.

Ingredients

  • 16 oz Rice Ramen Noodles
  • 1 tablespoon peanut butter
  • 2 tablespoon soy sauce
  • 2 tablespoon sesame oil or olive oil
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar
  • 1 clove garlic minced
  • 1 teaspoon fresh ginger grated
  • scallions sliced
  • 2 tbsp peanuts crushed
  • 1 tbsp sesame seeds
  • scallions sliced
US Customary - Metric

Instructions

  • Cook the noodles according to package directions
  • In a bowl, whisk the peanut butter, soy sauce, oil, honey, rice vinegar, ginger, garlic and scallions
  • Pour over the cooked and hot noodles
  • Toss gently to coat all the noodles, sprinkle with the peanuts and serve!
