This Texas caviar dip is one of those recipes you make once and keep forever. It is fresh, colorful, and packed with flavor in every bite.

Also known as cowboy caviar, this easy appetizer works as a dip, salad, topping, or side dish. Serve it with chips, spoon it over grilled meats, or pile it onto burgers and tacos.

The best part is how easy it is to make. The lime juice makes all the flavors pop, and the combination of beans and crisp vegetables makes it hearty enough to satisfy.

What Is Texas Caviar?

Texas caviar is a bean-based dip or salad made with chopped vegetables and a tangy dressing. It is often called cowboy caviar and is usually served with tortilla chips, but it is just as good spooned over grilled fish, chicken, burgers, or tacos.

It is the kind of recipe that multitasks beautifully and somehow tastes even better after it sits for a bit.

A Healthy Vegan Meal Idea

A while back, my husband suggested that we go vegan two times a week. I thought it was a great idea, so I spent the weekend researching meals that were healthy, filling, and still delicious.

After a few recipes, I remembered a Texas caviar dip I had at a friend’s house years ago. I called her, got the recipe, and served mine with my ultimate veggie burger, minus the bun. It was definitely a winner.

Make It Your Own

This recipe is super flexible. You can swap or add vegetables based on what you like, as long as they do not need cooking.

In the future, I would totally add avocado, celery, or even hearts of palm. If you like more heat, toss in diced habanero or a few dashes of hot sauce.

How to Serve Cowboy Caviar

  • With tortilla chips as a dip
  • Over grilled fish or chicken
  • On top of burgers or tacos
  • As a fresh side for BBQs and potlucks
  • By the spoonful straight from the bowl, no judgment

Texas Caviar Dip (Easy Cowboy Caviar)

Ingredients

  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can black eyed peas, drained and rinsed
  • 1 cup corn fresh, canned, or frozen and thawed
  • 1/2 English cucumber peeled and diced
  • 1/4 cup red onion finely diced
  • 1 jalapeño seeded and minced (optional)
  • 1 cup diced tomatoes or cherry tomatoes, halved
  • 2 green onions chopped
  • 1 garlic clove minced
  • Juice of 1 lime
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons apple cider vinegar or red wine vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • In a large bowl, add the black beans, black eyed peas, corn, cucumber, red onion, jalapeño (if using), tomatoes, green onions, and garlic.
  • In a small bowl, whisk together the lime juice, vinegar, olive oil, salt, and pepper.
  • Pour the dressing over the bean mixture and toss until everything is evenly coated.
  • Fold in the chopped cilantro.
  • Cover and refrigerate for at least 2 hours to allow the flavors to develop.
  • Stir before serving and adjust seasoning if needed.

Notes

  • This dip tastes even better after chilling, do not skip the resting time.
  • You can make it up to 24 hours in advance.
  • Add diced avocado right before serving for extra creaminess.
  • For more heat, leave the seeds in the jalapeño or add hot sauce.
  • Serve with tortilla chips, over grilled chicken, fish, or tacos.

    FWIW – When 80% of the content on your page is advertising (including GIANT gaps in your article), it takes forever to load and it makes me NOT want to view your recipes at all.

    NO one wants to see THAT much advertising … EVER.

    I substituted pinto beans for black eyed peas. I didn’t have any. I won’t do it again. They are not as firm and pinto are too soft. . I added a half cup of celery for crunch. It was wonderfull.
