Now that the Holidays are in full swing, I want to take advantage of the momentum by baking showstopper desserts. This spectacular Chocolate Cake Recipe with frosted cherries will not disappoint.
The cake is chocolate with chocolate ganache and it’s decorated with these beautiful “snowed” in cherries to create the “wow factor”.
Imagine serving this beauty at a party. It will surely be a hit! Not only they will love the chocolaty taste but also the beautiful cherries that are in season. I served it last night at my Thanksgiving dinner and everybody loved it, even the kids.
The sheen of the ganache is spectacular and it goes on the cake super silky. The cake has a more brownie-like texture than regular cake. It’s fudgier with a deep taste. Delicious!
I can’t take credit for this Chocolate Cake Recipe. A few years ago, my aunt gave it to me because it was the one that my grandmother used to make, I remember she decorated it hers with silver dragees.
I decided to add my personal touches to the recipe to make it more modern. It turned out spectacular. It’s been a long since I ate it and it was as if I was right at my grandmother’s house again (she died when I was very young).
This Chocolate Cake Recipe is a tad different than the ones you are used to seeing. The fudgy texture comes from the use of only egg yolks instead of the whole egg.
The Ganache requires a little elbow grease. You have to stir for quite a while, BUT it is worth it, AND at least you are burning off some of the calories that you will ingest.

Spectacular Chocolate Cake Recipe
Ingredients
For Cake
- 1 cup Unsalted Butter at room temperature
- 2 Cups Sugar
- 6 egg yolks
- 2 1/2 Cups All Purpose Flour
- 7 oz Semi-Sweet Chocolate broken into pieces
- 1 Teaspoon Baking Powder
- 1/2 Cup Milk
- 1/2 Teaspoon Salt
- 1 Teaspoon Vanilla
- Nonstick Spray
For Ganache
- 4 oz Semi-Sweet Chocolate Bar chopped
- 14 oz Can of Condensed Milk
- 1/4 Cup butter
For Cherry Toping
- 20 Cherries with stem
- 1 Egg White
- 1/2 Cup Sugar
Instructions
For Cake
- Preheat Oven to 350 Degrees F.
- In the mixer, combine the butter and sugar. Mix for 3-5 minutes
- Melt the chocolate and milk together in a small pot over medium heat. Stir until combined and let it cool
- In another bowl, mix the flour, baking powder and salt
- Add the vanilla and egg yolks to the butter mixture gradually with the mixer on medium speed
- Pour half of the chocolate to the butter mixture, alternating with the flour.
- Grease 2x 8" pans with nonstick spray
- Divide cake dough into the pans and bake for 20-25 minutes
- Remove from oven en let them them cool in the cake pans for 10 minutes. Unmold and let the cool on a baking rack
For Ganache
- On a double boiler, melt the chocolate and condensed milk. Add the butter and keep stirring until mixture thickens. It can take about 15- 20 minutes approximately.
- It is better to pour it on the cake while hot
Assembling Cake
- Place one layer of cake and pour some of the hot ganache
- Place the second layer of cake on top
- Pour the rest of the hot ganache so it covers the sides.
- Place cake in the fridge to set
Frosted Cherries
- In a little bowl, whisk the egg whites until frothy
- In another bowl pour the sugar
- Dip each cherry in the egg whites and then in the sugar until coated
- Place the dipped cherries on top of the cake in a pyramid fashion
- Enjoy

Thank you Sue! the ganache is runny at the beginning and then sets up in the fridge. It does stay soft but not runny.
