Healthy Banana Oatmeal Bread

This Healthy Banana Oatmeal Bread is delicious, hearty and super soft. It contains no flour or refined sugars. When you taste it, you won’t even know the difference. There is cinnamon and vanilla extract for a flavor explosion that will melt in your mouth.

This recipe is my redemption bread. Today I made 4 different dishes to post on the blog, unfortunately, I am sad to say that the first 3 turned out to be disasters.

I was so frustrated and feeling so bad! How can a person screw up 3 recipes in one day? My husband was telling me that I needed a break and to sleep on it. I couldn’t let it go! So later afternoon I got cracking and this delicious Healthy Banana Oatmeal Bread worked. It was such a relief and it really restored my confidence.

Now after my little rant, let’s go back to talking about the bread: it’s the easiest thing you will ever make. If you’re a novice baker, this recipe is for you.

Just dump everything in the blender, place in a loaf pan and bake. Doesn’t get any easier than this. My favorite part is the texture.

Since this Healthy Banana Oatmeal Bread doesn’t use flour, it has a soft crumb that cuts like butter. You can decide to add walnuts or omit if they’re not readily available. My husband and brother in law both agreed that the walnuts took this recipe to the next level.

This Healthy Banana Oatmeal Bread is perfect to have for breakfast or serve in the afternoon with coffee. I sprinkled in some stevia on top to give it a little shine and sweetness.

Ingredients

  • 2 1/2 Cups Oatmeal
  • 2 Bananas ripe
  • 2 Teaspoon Baking Powder
  • 1 Teaspoon Vanilla
  • 4 packets Stevia (I used Truvia you may also use honey or agave syrup)
  • 1-2 Teaspoons Cinnamon add more or less
  • 4 Eggs
  • 1/2 Cup Water
  • pinch Salt
  • 1/2 Cup Walnuts chopped (optional)
US Customary - Metric

Instructions

  • Preheat oven to 350 Degrees Fahrenheit
  • Place ALL ingredients (minus walnuts) in a blender or in a food processor until it creates a batter. Add the walnuts
  • Spray a loaf pan with cooking spray
  • Pour batter inside the loaf pan
  • Bake for 50 minutes to 1 hour or until a toothpick inserted in the middle comes out clean
  • Remove from oven and cool
  • Enjoy!

The loaf tastes better when eaten warm

        First round was not sweet enough since I used just 2 Tbsps of granulated sugar. My second attempt is in the oven now and I added 1 Tbsp of brown sugar along with the 2 Tbsps of granulated sugar. I also just added a 1/4c of chocolate chips. We like it sweet, which I realize is not the healthy option. Love this recipe!

      Hi Kathi, I used old fashioned for this recipe and haven’t tried it with steel cut so I don’t know if it will work.

    Hi. Great recipe. I’ve tried it twice. I added a 1/4 cup flax and chia seeds powder, some raisins and some cranberries. Tasted great!

      Glad you liked it, Marie! I personally left mine inside a cake dome for a couple of days. I’m afraid the texture will change when it’s refrigerated.

    Hi! Your recipes are really great and I love them! However, I don’t like to use baking powder, because it doesn’t seem helathy. Is ot okay to skip it totally? Could I use yeast instead? Also do you think it will turn out the same if I just make half a loaf as a try? Thanks!

    So sorry to say, this recipe is awful! Bland even when I added extra spices.

    Just discovered this recipe and will definitely try it because it has only oats, not flour, and no yeast and will use honey or maple syrup. Will keep an eye on the comments to see if any tries steel cut oats.
