Ingredients

  • 2 1/2 Cups Oatmeal
  • 2 Bananas ripe
  • 2 Teaspoon Baking Powder
  • 1 Teaspoon Vanilla
  • 4 packets Stevia (I used Truvia you may also use honey or agave syrup)
  • 1-2 Teaspoons Cinnamon add more or less
  • 4 Eggs
  • 1/2 Cup Water
  • pinch Salt
  • 1/2 Cup Walnuts chopped (optional)
US Customary - Metric

Instructions

  • Preheat oven to 350 Degrees Fahrenheit
  • Place ALL ingredients (minus walnuts) in a blender or in a food processor until it creates a batter. Add the walnuts
  • Spray a loaf pan with cooking spray
  • Pour batter inside the loaf pan
  • Bake for 50 minutes to 1 hour or until a toothpick inserted in the middle comes out clean
  • Remove from oven and cool
  • Enjoy!

    Hi, wanna try making this but don’t have truvia. How much honey or regular sugar in tbsp. measurement can I substitute for it? Thank you

        First round was not sweet enough since I used just 2 Tbsps of granulated sugar. My second attempt is in the oven now and I added 1 Tbsp of brown sugar along with the 2 Tbsps of granulated sugar. I also just added a 1/4c of chocolate chips. We like it sweet, which I realize is not the healthy option. Love this recipe!

      Hi Kathi, I used old fashioned for this recipe and haven’t tried it with steel cut so I don’t know if it will work.

      Glad you liked it, Marie! I personally left mine inside a cake dome for a couple of days. I’m afraid the texture will change when it’s refrigerated.

    Hi! Your recipes are really great and I love them! However, I don’t like to use baking powder, because it doesn’t seem helathy. Is ot okay to skip it totally? Could I use yeast instead? Also do you think it will turn out the same if I just make half a loaf as a try? Thanks!

    So sorry to say, this recipe is awful! Bland even when I added extra spices.
    My husband put maple syrup it for breakfast…….??‍♀️

    Just discovered this recipe and will definitely try it because it has only oats, not flour, and no yeast and will use honey or maple syrup. Will keep an eye on the comments to see if any tries steel cut oats.
