These easy beef tacos al pastor are made in the slow cooker. Shredded beef topped with pineapple chunks, cheese, and avocados. Delicious, easy to make, and the perfect dish to celebrate your Mexican-themed Party.
The big question is: Are you hombre enough to eat these smoky and spicy tacos? Chipotle peppers with adobo sauce and pineapple give these dishes a wonderful and distinctive flavor.
Tacos Al Pastor is generally made with pork on a big spinning machine, similar to Shawarma. When you order your taco, the meat is sliced thinly and placed in a corn tortilla.
The taco is topped with extra pineapple, cotija cheese, and other toppings of your choice. I decided to make mine in the slow cooker because it’s the easiest way to get the desired texture.
As you can see, these Tacos Al Pastor are very different than any other tacos you’ve tried before. The meat is very spicy and not for the faint of heart. YUM! You can of course make them to suit your taste and needs. Just add less chipotle peppers and more pineapple.
The next time you’re hosting a party, make a Taco Bar! Place the beef in a cute salsa bowl, the tortillas will stay warm in your tortilla warmer, slice some avocados and juice a few lemons.

I tried Tacos al Pastor a few years ago at a friend’s house who is from Mexico. He made it in a slightly different way using some sort of banana leaves. I got hooked by the deep smoky flavor and combination of ingredients. With every bite, you will get smoky, spicy, sour, sweet, fresh, and creamy. Sounds good right?

Tacos Al Pastor
Ingredients
For Beef
- 2-3 Lbs Beef Chuck Roast fat trimmed
- 20 oz Crushed Pineapple
- 1 Cup Apple Cider Vinegar
- 2-3 Chipotles in Adobo Sauce
- 1/2 Onion
- 1 Tablespoon Chili Sauce
- Salt + Pepper
For Tacos
- 12-15 Corn Tortillas
- Cotija Cheese you may use feta cheese
- Lime Juice
- Chunks of pineapple
- Avocado cut into chunks
Instructions
For Beef
- In a blender, place the crushed pineapple, apple cider vinegar, chipotle, adobo sauce, onion and chili sauce. Blender until sauce is completely pureed
- Place sauce inside a slow cooker
- Season the beef with salt and pepper. Cut into 2-3 pieces
- Slow cook on low for 8 hours or on high for 6 hours
- When meat is tender, shred it using 2 forks and place it inside the tortillas
- To Serve
- Warm the tortillas in the oven
- Fill the tortillas with beef, pineapple, cotija cheese and lime
- Enjoy!

2-3 in Chipotles Adobo Sauce <– does this mean 2-3 inches of chiles WITH some of the sauce? How much sauce?
1 Tablespoon of Chili Sauce = chili sauce is kind of a general term, what brand did you use so I can look it up to see what it is exactly

Hi Jo, let me clarify for you:
When you open the can or chipotles, you actually get pieces of chipotle. So just grab 2-3 pieces that come attached with sauce. you may add more if you like the heat.
For the Chili sauce, you can use sriracha, Heinz Chili sauce or even Tabasco.
