To me, there’s nothing better that will warm you up from the inside than a bowl of soup. This easy to make Crock Pot Stuffed Pepper Soup Recipe will do the trick. Plus if your family eats at different times, the dish will stay warm and wait for them as long as necessary.
I am a soup addict! I’ll take it in the form of broth, cream, chunky, silky etc. It’s delicious and filling. Just like getting a hug from inside. If you’re a fan of stuffed peppers, then you’re going to love it in this new form. The tomato gives the soup a sweeter taste and the peppers and beef adds flavor and texture.

Tomatoes, onions, peppers, spices, rice, broth and ground beef. I am sure you have most of these at home already so get cooking!

- 1 lb extra lean ground beef
- 1 cup onion chopped
- 14.5 oz . can diced tomatoes with roasted garlic and onions
- 15 oz . can tomato sauce
- 2 cups green and red peppers chopped
- 3 cups beef broth
- 1 teaspoon ⁄2 dried basil
- 1 cup cooked rice

Brown ground beef with onion in a skillet over medium heat.

Drain beef and onions and place in slow cooker.

Add tomatoes (including juice) and remaining ingredients, except rice – which should be added 1 hour before end of cooking.

Cover and cook on low for 6-8 hours.
