How’s January treating you?

Still sticking to your diet? – I lasted for about 72 hours. It was hard to resist a freshly baked loaf of bread.

That’s why I am starting over and praying that this time it’ll work.

To help those sugar cravings that I always get in the afternoon, I’ve updated my mug cake recipe and made it even better. I swear, this Fudgy Keto Mug Cake tastes amazing. I like it more that the regular flour and sugar one.

Maybe it’s the texture or the fact that I add some chocolate chips when it comes out of the microwave so they melt and make it taste so indulgent.

If you’re currently doing the Keto diet or are sugar/gluten-restricted, this keto mug cake is perfect for you. It doesn’t have any real sugar (I used Swerve) and replaced the wheat flour with almond flour.

The texture is spongy and light. The secret is to avoid overcooking in the microwave, otherwise your cake will be rubbery and not pleasant at all.

See the white foam on top of my cake? That was whipped cream! I added it when it came out of the microwave. The heat melted and left me with what you see on that picture.

Personally, it does not need additional toppings. It’s perfect as it is.

If you’re allergic to almonds substitute with coconut flour. Keep in mind that if you use coconut flour, reduce the quantity to 1/3.

Also, you can replace the Swerve with Truvia.

Ingredients

  • 2 tablespoons Almond Flour
  • 2 tablespoons Swerve or Truvia
  • 1/2 teaspoon Baking Powder
  • 2 tablespoons Unsweetened Cocoa Powder
  • Pinch Salt
  • 1 Egg
  • 2 tablespoons Butter melted and cooled
  • 1 tablespoon Prepared Coffee
  • 10 Sugar Free Chocolate Chips
US Customary - Metric

Instructions

  • Spray the inside of 2 mugs with nonstick spray
  • In a bowl, mix the almond flour, cocoa, sweetener, baking powder, and salt together
  • In another bowl mix the egg, melted butter and coffee
  • Slowly whisk in the dry ingredients into the wet
  • Divide mixture into 2 mugs
  • Microwave for approximately 45-50 seconds
  • Remove from microwave and top each one with chocolate chips
  • Enjoy!

    Good recipe but i think your carb count is a bit on thw hifg aide, 23 carbs? Does not sound right to me..
