No Bake Hazelnut Cheesecake Parfaits With Candied Hazelnuts
Imagine a hazelnut graham cookie crust, then a delicious hazelnut cheesecake cream topped with Chocolate Pudding and then sprinkled with candied hazelnuts. If this doesn’t scream summer, I don’t know what it does! Turn off the oven and let’s make this easy and delicious dessert that will please even the most picky eaters.
I have a soft spot for layered desserts. Each spoonful will grab the crust, the cheesecake, the pudding, and the hazelnuts. All that flavor in one bite. Think of the flavors, the textures, the sinfulness.
Nothing like it, right? Believe it or not, making it is fairly easy and quick. Since the cheesecake isn’t baked, there’s no long chilling or setting times. Simply assemble everything and you’re ready to dig in. Or, if you’d like, you can also make them in advance and serve after dinner.
I don’t know what’s my favorite part, all I can tell you is that this dessert is not complete with candied hazelnuts. I made extra just to munch on as a snack. Every time I buy hazelnuts, I always toast, and shell them and keep them in a baggie. So they’re available at a moment’s notice.
To make this incredible No Bake Hazelnut Cheesecake Parfaits, I took a tiny little shortcut: I used Kozy Shack® Chocolate Pudding. It is delicious, and creamy and has already been made in the dairy section of the supermarket. Just open and eat. No mix is needed.

No Bake Hazelnut Cheesecake Parfaits With Candied Hazelnuts
Ingredients
For Hazelnut Cheesecake
- 4 oz cream cheese softened
- 1/2 cup sugar cookies ground
- 1/2 cup hazelnuts toasted and peeled
- 1 Tablespoon butter melted
- 2 Tablespoons sugar
- 1/2 cup sour cream
- 2 tablespoons liquid coffee creamer hazelnut flavor
- 4 oz whipped topping thawed
For Candied Hazelnuts
- 1/2 cup granulated sugar
- 2 tablespoons water
- 1 cup toasted and peeled hazelnuts
For Assembly
- 4 cup chocolate pudding
- 4-5 Tablespoons Whipped Topping thawed
Instructions
For Hazelnut Cheesecake
- In the food processor, ground the graham crackers and hazelnuts until pulverized
- Melt the butter
- Mix the butter with the ground mixture
- Divide the crust between 4 glasses and press on the bottom of each glass
- Refrigerate the crust while you do the cheesecake
- Add the cream cheese and sugar into the bowl of a mixer, mix on medium high speed for 3 minutes or until creamy
- Add the sour cream and coffee creamer mix
- Finally remove the bowl from the mixer and fold in the whipped topping using a spatula
- Divide this mixture among the 4 glasses with the crust
- Top with chocolate pudding
- Refrigerate for 2 hours
For Candied Hazelnuts
- Prepare a sheet pan with parchment paper or a silicone sheet
- In a heavy bottomed saucepan, add the sugar and water
- Cook on medium heat until mixture starts getting caramel color. Do not stir
- Remove from heat and add the hazelnuts. Mix
- Pour the entire mixture on the sheet pan and let it cool until set
- Break it up with a knife or a kitchen mallet
- Sprinkle on top of the parfait
- Enjoy!
