Roasted Pumpkin Seeds
I am sure this year you might be buying a few pumpkins to carve. Kids love the tradition of having parents making jack-o-lanterns for Halloween.
Stick a candle in the middle and watch the face glow in the dark. The big question is: Once you hollow the pumpkin out, what do you do with the seeds?
Do you throw them out? I say NAY!! They make a crunchy and delicious snack for kids and adults.
On Monday my husband came home holding this huge pumpkin. My girl’s eyes lit up and instantly started thinking of a great spooky design.
Of course mommy blogger instead of helping them carve the pumpkin, I went on Periscope and broadcasted the whole process.
During the broadcast, I asked the viewers what ideas they had to do with the seeds. One lady told me to just bake them with salt.
I listened to her and that’s exactly what I did. The only difference is that I soaked them in salted water overnight. The results are amazing!
They are tasty, crunchy, and salty. My husband adds them on top of salads and I just like to snack on them just like nuts.
Now that I know these Roasted Pumpkin Seeds taste amazing, I told my husband to buy some more pumpkins so we have a steady supply of snacks at home.

The great thing about these Roasted Pumpkin Seeds is that you can flavor them in any way you’d like. Make them spicy, sweet, savory, etc.
I honestly love the real flavor of the seeds so salt for me is enough.

Roasted Pumpkin Seeds
Ingredients
- 2 cups Pumpkin Seeds from 1 Large Pumpkin approx.
- 2 Tablespoons Olive Oil
- Salt to taste
- Pepper (optional) to taste
Instructions
- Clean your seeds and rinse them with water
- Place them in a bowl covered with water and 1 Teaspoon of salt overnight
- The next day, drain your seeds and dry them up with a paper towel
- Preheat oven to 375 Degrees Fahrenheit
- Place them in a bowl and add the olive oil, salt and pepper. Mix
- Place seeds in a sheet pan in one layer
- Bake for 25-30 minutes or until browned. Mix them every 10 minutes
