Savory Black Eyed Pea Hummus

At the end of the year, we tend to host more gatherings at home. You can imagine the work that it takes to prepare for each one.

I try to keep it simple and choose items that I can make in advance. Especially when it comes to no-cook recipes like this one.

 

The only downside to making things in advance is that I have to hide them from my husband. He says that he “can’t help it” and has eaten many foods that were meant to be served at parties.

So now I have to come up with ingenious ways to disguise them. Either behind the Brussels sprouts (which he hates) or in empty jars of mayo.

If you don’t have black eyed peas at home, substitute any other bean. White cannellini, black, or chickpeas work well with this hummus.

Ingredients

  • 1 cup Black Eyed Peas cooked
  • 1/3 cup Lemon Juice
  • 1 teaspoon Cumin
  • 2 teaspoon Garlic minced
  • 1/2 cup Tahini Paste
  • 1/4 cup Olive Oil
  • Salt and Pepper to taste

Garnish (optional)

  • 5-6 Black Eyed Peas cooked
  • 1 teaspoon Parsley chopped
  • 1/2 teaspoon Olive Oil
US Customary - Metric

Instructions

  • Combine all ingredients in a blender or food processor. Blend until smooth
  • If the mixture is too thick, add water by the quarter cup until you’ve reached the right consistency
  • On serving, place into the serving bowl, make small paths with the back of a spoon and drizzle olive oil into the wells 
  • Serve with pita bread, vegetables, and crackers
  • Enjoy!
