Spiced Apple Muffins

There’s nothing more comforting than waking up to freshly baked muffins and brewed coffee. These delicious Spiced Apple Muffins are made in no time and taste better than your local bakery.

Although here in Miami the weather has yet to change, in other parts of the country people are enjoying the fall breeze and the beautiful leaves changing. Apple orchards are in full bloom and it’s time to shake some bushes and take a nice crisp bite out of a granny smith or a gala.

Personally, I love the taste of these muffins. They’re moist, chunky, and have tons of flavor from the cinnamon, nutmeg, cloves, and allspice. When you take a bite, you will notice pockets of sweet apple pieces. Spread some soft butter on them and you’ll be in heaven.

Spiced Apple Muffins

Ingredients

For muffin batter

  • 2 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 teaspoon cinnamon
  • cloves pinch
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened, 1 stick
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup buttermilk

For Apple

  • 1 large Granny Smith Apple cored and peeled
  • 1/4 cup granulated sugar
  • 2 teaspoon cinnamon
US Customary - Metric

Instructions

  • Preheat oven to 425 degrees Fahrenheit
  • Line a muffin pan with muffin liners
  • Chop apples into small pieces and combine with sugar and cinnamon. Set aside
  • In a bowl combine flour, salt, baking powder, baking soda, cloves, cinnamon, allspice, nutmeg, and cloves
  • In the bowl of a mixer, place butter and sugars. Mix on medium speed until creamy
  • Add eggs one at a time and continue mixing. Add vanilla. Scrape down the bowl of the mixer with a spatula
  • Alternate adding the buttermilk and flour mixture, starting and ending with the flour
  • Pour a little bit of the muffin batter in the muffin tin
  • Add 1 teaspoon of the apple mixture on top
  • Cover with more muffin batter
  • Add 1 more 1 teaspoon of the apples
  • With a skewer or a small knife swirl the apples into the batter
  • Bake for 5 minutes, lower the heat to 350 degrees and bake for 15-20 minutes
  • Enjoy

She over came all odds to become an addict and joined the military and now is enrolled in college to become a psychologist.     My Dad has an amazing neighbor, Kelly. He had a leg amputated last year and just recently moved back into his home. I am there almost every day but I still worry about him being home alone.
    And that is where my angel Kelly comes in: she pops over several times a day just to say ‘hi’, and if anythiing seems off she’ll call me immediately. And she does this just to be neighborly. And I think that is pretty darned extraordinary.

    My dad is the extraordinary person in my life. After we lost my mom my dad raised all 3 of us girls. He had to talk about some of the most embarrassing things that my mom would have talked to us about. He did a great job though and was always there for us each step of our lives and is my hero.

She then went on to graduate school PT at night as well and taught school during the day! Survived two types of cancer and worked over 60 years before retiring only recently.
