Is there something better than caramel, apple, and puff pastry all together? This Individual Tarte Tatin Recipe is so easy to make and the results are delicious! Imagine serving them at a dinner party. They will surely be the highlight of the evening.
Tarte Tartin is simply an upside-down apple tart. I make a small version to give you a different presentation. I think these are way cuter and if you serve them warm with a mound of cream on top you’ll be in heaven.
For this Individual Tarte Tatin Recipe, I used Granny Smith apples which are tart and have great texture. Plus they won’t dissolve while cooking. Since there’s caramel on top, the sweetness will give the Tart a very nice rounded flavor. The puff pastry is delicate and crunchy at the same time. I guess you can say that this dessert is very drool-worthy.
If you’re a novice in baking, then this dessert is for you! There’s no kneading, rolling, or whipping involved. The only difficult part not burning the caramel. If you don’t like apples you can substitute for pears, peaches, or nectarines. You can also throw in some cherries if you please.

Here’s a step-by-step guide to my Individual Tarte Tatin Recipe:
Make your caramel and add some butter. Pour the caramel on the crevices of muffin tins. Add cut-up apples and bake for 30 minutes. Add puff pastry circles and bake for 20 minutes more.
That’s it! When assembling the apples just make sure that you are putting them in a nice shape, that way when you flip them over it will make a nice presentation.
Tarte Tatins can be served cold or warm. If you want to serve them warm you can still make them in advance. Just bake for a few minutes before serving. I use a muffin tin for these, avoid using the mini muffin pan since it will be harder to make a nice shape.
Individual Tarte Tatin Recipe
Ingredients
For Caramel
- 1/2 Cup Sugar
- 1/4 Cup Water
- 2 Tablespoons Butter unsalted
For Tarte
- 2 Granny Smith Apples peeled, cored and sliced
- 1 sheet Puff Pastry thawed
Instructions
- Preheat Oven to 325 Degrees F.
- Grease a muffin tin with nonstick spray or butter
- In a heavy pot over medium heat, cook the sugar and water together. Stir every few minutes until caramel turns yellow or amber color (about 5 minutes)
- Remove from heat and add the butter. Being careful because caramel can splash. Mix with a spoon until combined
- Pour caramel into each muffin tin. Let it cool for a few minutes
- Arrange the apples on top of the caramel
- Bake for 30 minutes
- Meanwhile, using a cookie cutter or the rim of a glass, cut out puff pastry circles. Freeze the unused Puff Pastry
- After 30 minutes have elapsed, open the oven door and carefully place the puff pastry circles on top of each tart
- Bake for 20 minutes more
- Remove from oven, let them cool for 2-3 minutes and unmold onto a plate
- Enjoy!
