Incredible Berry Crisp
Don’t you just love warm desserts straight out of the oven?
Imagine a combination of sweet and tangy berries with a crunchy crumb. All you need is a spoon and your appetite.
Of course, if you want to elevate your dessert, why not top it off with vanilla ice cream and make it “A La Mode”. The choice is yours.
Since my family loves the crisp part, I added some dough at the bottom in order to soak up the juice from the berries. This is what makes it extra special.
Aside from the delicious taste and the easiness of the preparation, I love this berry crisp because it’s super versatile and very forgiving in ingredients. It’s one of those dishes where you can “wing it” with the ingredients you already have in your kitchen.
For instance, if you don’t have any fresh fruit around, just use frozen ones straight from the freezer. They’re not just for smoothies you know 😉
You can bake these in individual ramekins or in a big baking dish. Obviously, the individual ramekins bake up much faster than a large platter. You’ll know they are ready when the berries inside start bubbling up and the crust develops a nice brown color.

I am teaching my 10-year-old how to double or halve a recipe, a good way of teaching math while getting to enjoy the delicious results.
For me, baking is an excellent way to pass the time, bond with my family, and a great learning tool.
I used the Egg Beaters, Smart Balance Spread and Wyman’s of Maine frozen triple berries.
I love the fact that I can save money while making this recipe. Now I can double and triple my batch when we have guests over for dinner.

- 4 cups Wyman's of Maine Berries frozen
- 2 tablespoons Lemon Juice
- 2 teaspoons Lemon Zest
- 2 tablespoons Cornstarch
- 1/4 cup Sugar
- 1/2 cup Smart Balance Spread melted and cooled
- 1/4 cup Egg Beaters
- 1 cup Old Fashioned Oats
- 2 cups All Purpose Flour
- 1/2 cup Brown Sugar
- 1/2 cup Granulated Sugar
- Pinch of salt
- 1 teaspoon Baking Powder
- 1 teaspoon Pure Vanilla Extract

Preheat oven to 375 F

In a bowl, mix the berries with the cornstarch, sugar, lemon juice and zest. Set aside

In another bowl, mix the flour, oats, sugars, baking powder and salt. Add the egg beaters and the melted Smart Balance Spread.

Using individual ramekins or a baking dish. Crumble half of the dough in the bottom. Add the berries and top with the rest of the crumble

Bake for 25-30 minutes for individual ramekins or for 45 minutes for the large baking dish

Serve warm from the oven
