I love taking a bite out of the juicy tangy chicken with a crunchy exterior. Who knew chicken and potatoes could be this easy?
A few weeks ago I made my delicious Ranch Cauliflower since then, I kept craving the same flavor and wanted to try it on chicken. I also had a few potatoes in my fridge that were about to go bad in a few days. So that’s how this dish was born.
Now that I’ve tried sheet pan dinners, I am hooked! It is so cool that the main and side dish cook at the same using the same types or seasonings. Makes for an easier weeknight meal, less cleanup and more time to spend listening to my family talking about how their day went.
Ever since my daughter started 3rd grade it’s been crazy around here. Her homework load has tripled and the poor girl spends all afternoon either solving problems on her notebook or doing her required software on the computer.
As soon as we get adjusted to this new system we’ll stop being so overwhelmed, for the time being, I will be hiding in the closet with a glass of Prosecco. Just knock if you need me 😉 .
If you’re gluten sensitive, simply omit the Panko or get some gluten free breadcrumbs. They’re easily found at the Supermarket.

Ranch Potatoes And Chicken Sheet Pan Dinner
Ingredients
- 4 Thighs and legs each or thighs and legs attached
- 4 Potatoes large, cut into 1 ½” chunks
- 1 packet Ranch dressing mix
- 1/2 Cup anko crumbs
- 1 tablespoon Parsley dried
- salt and pepper to taste
Instructions
- Preheat oven to 350
- In a large bag (I find Ziploc freezer bags work great), combine the ranch dressing mix and the panko crumbs.
- Season the chicken and potato pieces with salt and pepper
- Doing one piece of chicken at a time, place the meat in the bag and give it a great shake, ensuring coating sticks all over. Place on a parchment lined baking pan
- Working with half the potatoes at a time, place them in the bag and also give them a good mix around in the bag to evenly coat. Place on the pan as well, laying them as flat as possible (not piling them on top of each other)
- Bake for approximately 45 minutes. Check the chicken for doneness as well as the potatoes. If a fork goes in easily into the potatoes, and they are slightly golden on top, they are ready. You can use a thermometer to check the chicken if you are unsure.
- Remove from the oven and let rest for 5 minutes.
- Enjoy!
