Lemon Balsamic Asparagus Recipe

My husband loves eating healthy. He counts calories and quantities of fat intake. Yes, it can be very annoying and although he loves to eat healthily he does not like to eat veggies unless it’s a salad.

My job is to wreck my head coming up with delicious veggies he will EAT and that’s how this delicious Lemon Balsamic Asparagus Recipe was born.

I love Asparagus, they are so meaty and filling. They have a lot of flavor on their own but they DO take on additional flavoring and sauces.

When I was little, my mom used to make this awesome Hollandaise sauce with tons of lemon and butter. Unfortunately, it’s a bit indulgent for a quick weeknight meal so I just stick with this easy Lemon Balsamic Asparagus Recipe.

Asparagus can be grilled, baked, steamed and boiled. You can use either method you may like. If I am roasting the entree in the oven I just stick them in there so they can cook as well.

If not, just steam them! See how beautiful the color is? The lemon and reduced balsamic vinegar add a tangy yet sweet flavor at the same time.

When you go to the supermarket try to get the really big asparagus, not the skinny pencil ones. I prefer their texture, it’s less stringy and there’s a more meaty bite to it. Next time I will definitely add some lemon zest to enhance the flavor. I will let you know how that one goes.

Ever since I discovered that they sell the Balsamic Glaze already bottled my eyes opened up to tons of possibilities! Instead of making it at home I just open the bottle and pour it onto everything.

The flavor is so sweet that is can be used to top ice cream and cakes, yet it is tangy too. I love the combination!

Ingredients
  • 1 Bunch Asparagus
  • 1/2 tablespoon Olive Oil
  • 1 Lemon juiced
  • 1-2 tablespoons Balsamic Glaze
  • Salt + Pepper to taste
Instructions
  1. Preheat Oven to 350 Degrees F.

  2. Clean Asparagus

  3. Place them in a sheet pan and pour Olive Oil all over them and make sure that everyone is coated. Season with salt and pepper

  4. Roast for about 15 minutes or until soft

  5. Remove from oven and add lemon juice

  6. Drizzle Balsamic Glaze

Recipe Notes

If you want to make the glaze yourself simply place 1 cup of Balsamic Vinegar in a pot and simmer on medium-low until reduced and liquid becomes thicker (takes about 15-20 minutes)
