Welcome to cheesy heaven. This one pot lasagna is delicious, hearty, comforting, and is made in 30 minutes or less. Don’t believe me? Try it for yourself and see.

If you come home from work late at night and you need a fresh idea to feed the hubs and the kids, look no further, this no fuss One Pot Chicken Lasagna will do the trick!

Easy enough to serve it during the week, and elegant enough for entertaining. This recipe serves 4, so if you’re using for a party, simply use a bigger pot and double the amount of ingredients needed.

Don’t know about you, but I get bored with the same old chicken recipes I make every week. Granted they are good, but sometimes you need to mix it up, or add something else to the rotation.

Since the weather has been cold in Miami (believe it or not), this Cheesy One Pot Chicken Lasagna is just what we need. And don’t forget, it does not require a lot of clean up.

Lasagnas are super delicious, but cooking them the old way has proved to be messy and time-consuming: first we have to boil the lasagna noodles and carefully remove them from the pot without breaking them, then we have to cook the beef with the tomato sauce, then the ricotta part.

Finally, when you think you are finished, you have to bake the whole dish for about an hour or so. Who wants to go through all of that when you can simplify your life with just ONE POT?

You must be thinking, but how can it be possible to make it in 30 minutes? Well, my friends, I took a shortcut and used leftover chicken from last night.

Don’t have leftover chicken? Simply get some rotisserie ones or cook a few chicken breasts and slice into bite size pieces.

Ingredients
  • 24 oz Jar of Pasta Sauce or natural sauce recipe
  • 1 - 1 1/2 lbs Cooked chicken pieces
  • 4 oz Oven Ready Lasagna Noodles
  • 1 Large Onion diced
  • 2 cloves Garlic minced
  • 1/4 cup Red wine you may substitute with water or stock instead
  • 1 Bay Leaf
  • 1 Teaspoon Italian Seasoning
  • 8 oz Mozzarella Cheese shredded
  • 1/4 cup Parmesan Cheese shredded
  • 4 oz Ricotta Cheese
  • 3-4 leaves Basil to garnish optional
  • Salt and Pepper to taste
  • 1 teaspoon of Olive Oil
US Customary - Metric
Instructions
  1. Preheat oven to 350 degrees Fahrenheit
  2. In a deep oven-proof pot, heat the olive oil on medium heat
  3. Add the onion and Italian seasoning. Cook for 2-3 minutes or until translucent. Add some salt
  4. Add the garlic and cook for 1 more minute stirring constantly to prevent the garlic from browning
  5. Add the chicken to the pot and stir constantly until they are completely combined. Break them off into smaller pieces with the wooden spoon
  6. Deglaze the pot with the red wine (or water or stock). Scrape the bottom of the pot with the wooden spoon
  7. Add the entire jar of pasta sauce and cook until the sauce starts to simmer
  8. Add the bay leaf and Ricotta cheese. Mix well
  9. Break the lasagna noodles into 2 pieces and stick them into the pot. Make sure that there's enough sauce to cover the noodles
  10. Sprinkle the cheeses all over the lasagna
  11. Place the pot in the oven for 18-20 minutes or until the noodles are tender and the cheese has melted completely
  12. Remove from oven and let the lasagna rest for 5 minutes before serving. Remove bay leaf
  13. Sprinkle fresh basil on top and serve
  14. Enjoy!
